This quick Mexican restaurant-style tomato salsa is fresh, savory, and built for eating by the bowlful with thin, salty chips. It comes together in a food processor in under 10 minutes with no cooking required.
Roughly chop onion and jalapeño, ribs removed. Add to a food processor with cilantro, garlic, lime juice, salt, and vinegar. Pulse 15-20 times to break down into a medium mince, scraping the sides halfway through.
Add tomato sauce and fire-roasted diced tomatoes. Pulse in short bursts until it looks like tasty salsa.
Taste and adjust salt and lime if needed. Chill before serving.
