Shrimp Cocktail

Shrimp cocktail is THE party appetizer. Most people grab it pre-made and arranged from the store, which is fine, but this will have everyone’s jaw. This recipe brings shrimp cocktail from a ten out of ten to a one thousand out of ten.

Ingredients 

  • 3000 mL water
  • 2 lemons
  • 2 heads of garlic, cut in half
  • 150 g kosher salt
  • 75 g sugar
  • 2 bay leaves
  • 1 kg U8-12 easy peel raw shrimp

Cocktail Sauce

  • 350 g chili sauce
  • 1 lemon, zest & juice
  • 50 g prepared horseradish
  • 10 g hot sauce (i use Frank’s)
  • 40 or so cranks of black pepper

Instructions 

  • In a pot, combine water, juiced halved lemons, garlic, salt, sugar, bay leaves. Bring the pot to a boil and simmer for 5 minutes.
  • Stir the shrimp into the water, turn off the heat, and poach for 4 minutes.
  • Once the shrimp is poached, transfer it to an ice water bath to cool.
  • Mix all cocktail sauce ingredients to combine.
  • Remove the shrimp from the water bath and dry thoroughly. Dip them in the cocktail sauce and enjoy!
