Sheet Pan Sweet Potato Aloo Gobi

Sweet potatoes and rice is a great meal for anyone trying to cut back on door dash and potato chips, or just someone who wants to eat healthy, delicious food. Try out these sheet-an sweet potatoes and veggies next time you wanna cook something quick and healthy.

Ingredients 

  • 750 g sweet potatoes, peeled and cubed
  • 1 head cauliflower, cut into 1” florets
  • 1 large yellow onion, roughly chopped
  • 1 large poblano pepper, small diced
  • 25 g garlic, 5-6 cloves, smashed
  • 15 g tomato paste
  • 5 g cumin, ground
  • 5 g garam masala
  • 15 g curry powder
  • 15 g kosher salt
  • 20 g olive oil
  • 430g oz canned garbanzo beans, drained
  • 125 g coconut cream
  • 250 g water, or fill up the coconut cream can twice
  • fresh cilantro
  • lime juice

Instructions 

  • Preheat oven and sheet tray to 450°F (230 °C).
  • In a large mixing bowl, combine potatoes, cauliflower, onion, poblano, garlic, tomato paste, cumin, garam masala, curry powder, salt, olive oil, beans, coconut cream and water.
  • Toss to combine & spread onto preheated sheet tray. Roast for 35-45 minutes, checking for tenderness.
  • After roasting, add 3-4 dollops of additional coconut cream, chopped cilantro, and lime juice to taste.
  • Serve over rice.
