Weeknighting: Dan Dan Noodles

These are not by any means authentic dan dan noodles but boy oh boy are they good. imagine the perfect balance of sweet, salty, spicy and umami along with a variety of textures AND it only takes about 25 minutes to come together.

Ingredients 

  • 350 g ground pork
  • 125 g chili crisp
  • 30 g tahini
  • 125 g chicken stock
  • 10 g sugar
  • 40 g soy sauce
  • 5 g sesame oil
  • 2 g Chinese five spice
  • 40 g hoisin
  • 40 g mirin
  • 190 g broccolini, 1 bunch cut into thin coins, leaving florets intact
  • 200 g spaghetti noodles

GARNISH

  • scallions, cut thinly, greens only
  • chopped peanuts, dust sifted out
  • sesame seeds

Instructions 

    I don't recommend multiplying this recipe. The batch size noted below makes 2 portions using one large pan.
  • Bring a pot of water to a boil. Season with a strong pinch of salt.
  • To make the sauce, whisk together the chicken stock, hoisin, sugar, tahini, mirin, soy sauce, sesame oil, & five spice.
  • Cook the spaghetti in the pot of boiling water per package instructions (9 minutes.). When the pasta is done cooking, strain off the liquid and toss the noodles in some oil to keep from sticking.
  • Heat a 12″ saute pan over medium-high heat and begin to brown the ground pork, breaking it up until it’s finely crumbled and fully cooked.
  • Toss in the broccolini and a pinch of salt and cook for about 3 minutes.
  • Add chili crisp to pork and fry the meat in the oil for another 30 seconds.
  • Add the sauce, then add the drained cooked noodles and swirl and toss until the sauce thickens and begins to stick to the noodles.
  • Plate noodles and top with scallions, peanuts and sesame seeds.
