5 Ingredient Mexican: Tostada

Lorn and I used to be on a very tight budget. We ate Tostadas at least 3 times a week. This is an even more simplified version of what we used to eat and it tastes just as good. This is great for people who need sustenance, are on a budget and don’t have a whole lot of time.

Ingredients 

  • 850 g canned black beans, 2 15oz cans
  • 5 g kosher salt
  • 10 g onion powder
  • 10 g ground cumin
  • 5 g garlic powder
  • olive oil
  • apple cider vinegar or lime juice
  • 4 tostada shells
  • avocado, cubed
  • cherry tomatoes, sliced
  • feta cheese, crumbled
  • taco sauce or hot sauce

Instructions 

  • Preheat your oven to 350°F/175℃
  • In food processor, combine 1 drained can of black beans, 1 undrained can of black beans, salt, onion powder, cumin, and garlic powder.
  • Process until smooth.
  • Heat olive oil in large non-stick over medium-high. Add bean puree to hot oil and fry for 10 minutes, stirring frequently.
  • Off heat, add dash of apple cider vinegar or lime juice.
  • Heat up the tostada shells in the preheated oven for 5 minutes.
  • Build the tostadas in such an order: tostada, bean puree, avocado, tomatoes, feta, then hot sauce.
