Shrimp Cocktail

Shrimp cocktail is THE party appetizer. Most people grab it pre-made and arranged from the store, which is fine, but this will have everyone’s jaw. This recipe brings shrimp cocktail from a ten out of ten to a one thousand out of ten.

Ingredients 

  • 3000 g water, mL
  • 2 lemons
  • 2 heads of garlic, cut in half
  • 150 g coarse salt, 2/3c
  • 75 g sugar, 2/3c
  • 2 bay leaves
  • 2 lb U8-12 easy peel raw shrimp, 1kg

Cocktail Sauce

  • 350 g chili sauce, 1 jar
  • 1 lemon, zest & juice
  • 50 g prepared horseradish, 3 1/2T
  • 10 g hot sauce (i use Frank’s), 2t
  • 40 or so cranks of black pepper

Instructions 

  • In a pot, combine water, juiced halved lemons, garlic, salt, sugar, bay leaves. Boil and simmer for 5 mins.
  • Add shrimp to water, turn off the heat, & poach 4 min.
  • Once poached, transfer to ice water to cool.
  • Mix all cocktail sauce ingredients
