CHICKEN TINGA
Chicken Tinga, or Pollo De Tinga, is such an easy, yet delicious dish that comes together within an hour. This is essentially, smoky, tomato-y, braised chicken that goes great on a toasted but s also great in burritos, tacos, or even just over rice.

If I could choose one meal for the rest of my life it would probably be chicken and rice. I just never get tired of it and it always hits the spot. Arroz con pollo honestly makes me like chicken and rice even more. This was my favorite recipe out of the 5 Ingredient Mexican video and I hope you give it a try.
5 Ingredient Mexican: Slow Cooker Al Pastor
This Al Pastor is far from authentic but it is very satisfying and a close second to the traditional dish. It’s great for when you want to just throw the meat in the slow cooker, go to work and hav dinner 90% done when you get home. I use a sauté pan to get color on the pineapple, combine it with the pork and marry the two with the cooking liquid and magic happens.

Chilaquiles
My best recipe for chilaquiles is a simple and insanely delicious way to eat what is essentially nachos for breakfast. Fresh fried tortilla chips smothered in a deep, fragrant, cheesy chile sauce and topped with a runny egg, avocado, cilantro, and a splash of lime.

I LOVE quesadillas and this is one of the best, IMO. Melty cheese and marinated chicken in a homemade tortilla with chipotle ranch dipping sauce.
